Off the grid(dle)

After a long but encouraging Saturday on the job, Sunday called for a heavy dose of relaxation. Aggressive relaxation, you might say.

When it came time for breakfast, I was torn. Sweet potato pancakes from Ruth Ann’s were beckoning. But that involved wearing for-real clothes, not pajamas. I wasn’t emotionally prepared for that kind of commitment.

Then I remembered the stash of sweet taters in this week’s CSA. How hard could homemade pancakes be?

The answer? Not hard at all, using this recipe.  But be warned, one batch makes a LOT of pancakes. Four days worth for two people, to be precise.

No complaints here, though. That just means a few extra weekdays that will be easy like Sunday morning.
