Few things are better than walking into a cozy house filled with the smell of homemade bread in the oven. But these days I don’t seem to have time for even a speed date with the Pillsbury Dough Boy.

Whipping up a loaf isn’t difficult, but it kills a couple of hours working the dough as the yeast rises. So what’s a girl to do?

My favorite homesteading blog frequently extols the ease and wonder of no-knead bread, so last week I decided to give it a try.

Simply mix the ingredients together, cover, and ignore for 12-18 hours. Then roll the dough into a ball, drop in a hot dutch oven, and bake for 45 minutes.

Out came the crustiest, most glorious loaf ever to surface from our kitchen. Yeah, I’ll just be doing that again.
